Our harvest

We harvest by hand, at night, depending on ripeness checks.
In view of climatic changes, harvesting is taking place earlier and earlier.
These are spread over a month, as the different grape varieties are not all harvested at the same time.

The winery

We practice minimal intervention in the cellar, using only the bare minimum of sulfur at bottling. No external yeasts are added—only the natural yeasts from our grapes (indigenous yeasts).
Our cellar is primarily equipped with stainless steel tanks of various capacities, as well as oak and acacia barrels for aging wines intended for long-term storage. Since 2023, we have also incorporated an amphora.
We have two pneumatic presses.
